The Bison Ribs, also known as spareribs or short ribs, are the perfect choice for lovers of hearty grilled meat. These short ribs come from the lower chest of the bison and stand out with their tender meat, which easily falls off the bone when slow-cooked. Bison ribs are leaner than traditional beef ribs yet still offer an intense, natural flavor.

Whether glazed with a classic BBQ marinade or simply seasoned, bison ribs can be prepared in many ways and are a highlight for barbecue nights and cozy meals with family and friends. Thanks to the bison’s natural diet and ethical rearing, you receive a high-quality product that delivers exceptional taste.

Preparation: Marinate the ribs at least 2 hours before cooking, for example, with a classic BBQ marinade made from honey, soy sauce, paprika, and garlic.

Smoker or Grill: Cook slowly over low heat (approx. 110–130°C / 230–265°F) for 4–6 hours. Add smoking chips occasionally to enhance the smoky flavor.

Oven: Braise in the oven at 140°C (285°F) for about 3–4 hours until the meat is tender and easily falls off the bone.

Glazing: In the last 20 minutes, brush with marinade and caramelize over higher heat.

Serving Suggestion: Serve the ribs with coleslaw, corn on the cob, and homemade BBQ sauce.

Bison Spareribs

Bison ribs, also known as spareribs or short ribs, come from the lower chest and rib arches of the bison. These cuts are known for their juicy texture and bold flavor, which is enhanced through slow cooking. Compared to beef ribs, bison ribs are leaner and have a delicate, nutty aroma.

Thanks to their coarse-grained structure, bison ribs absorb marinades exceptionally well, making them perfect for BBQ and smoking. This cut is a must for grill enthusiasts looking for a healthier yet flavorful alternative to traditional ribs.
